Before downloading the version for Mac, I wanted to know if it was still compatible with macOS Monterey ?

GanttProject 3.3+ runs on Java 17 which is compatible with macOS 10.11+ (Monterey is 10.12). But why don’t you just try? It is free and takes a couple of minutes. You don’t need to download anything besides GanttProject application,
