I wanted to verify that files that I create using this lovely GanttProject software are the property of my company and are private to my company. I assumed so, but just wanted to verify.

You do own anything which you create with open source software. GanttProject is a desktop application and stores all files in your local computer file system. File privacy policies are thus defined by your computer and environment settings.
