Is there any way to open the last project automatically?
I have only one project and after I click on Gantt Project icon and it opens, I always have to click to Open, Recent documents, click on my project …

Not at the moment, sorry. To save your time, you can use keyboard shortcuts: Ctrl+O opens a file dialog, and the recent documents tab is supposed to open automatically. Arrow down will move the focus from the text box to the document list, where the most recent document must be the first one. Then Crl+Enter will open it.
Anyway, an option to open the last project automatically would certainly be useful. There is a pretty old relevant enhancement request in the issue tracker:
